OUR VALUES
Chisholm Trail Bison Co.’s values centers on a natural approach to ranching.
We exclusively source from and support ranches within the local Chisholm Trail corridor. These partner ranches prioritize exceptional animal care, ensuring a low-stress, free-range environment where bison graze on healthy grasses throughout their life. Antibiotics are never introduced to animals intended for commercial sale. If treatment is necessary to cure an illness, that bison is removed from inventory. By upholding these high standards, we are dedicated to providing premium-quality bison meat.
HEALTHY & HUMANELY RAISED
Bison meat is one of the leanest, healthiest proteins available today. Our bison are raised without the use of hormones, steroids, or artificial growth promotants. They thrive on native grasses, alfalfa cubes, and—during harsh seasons—bailed grasses. Some ranchers choose to supplement with grain, oats, and barley without being confined to a feedlot. A clean, natural, vegetarian-based diet contributes to the superior taste and health benefits of the meat we provide.
The well-being of our bison is our top priority, even during processing. Ranchers and USDA/state-inspected processors use low-stress practices such as minimizing transport time, providing grass and water during longer transports, resting animals upon arrival, providing clean, uncrowded conditions, and more. This humane approach ensures that the meat is not only tender, but also ethically sourced.
CUSTOM OFFERINGS
Once harvested, our bison meat is typically aged for 7-10 days to enhance tenderness. We often offer a wide variety of custom cuts and value-added products such as sausages, steaks, roasts, ribs, fajita meat, and more.
Our packaging proudly highlights the ranch origin of our meat, offering you full transparency about its production and quality assurance. With advanced planning, we can accommodate both standard and custom packages to suit the needs of any local restaurant, wholesaler, or individual buyer. All products are vacuum sealed to ensure long-lasting freshness and protection from freezer burn, though unfrozen options can be arranged with proper planning. You can receive your meat through delivery within 500 miles of Fort Worth, Texas, local shipping, or local pickup from a processor or one of our locations in Fort Worth or Cleburne, Texas.
Bison meat availability can vary with the seasons. Roasts are more commonly offered in the fall, while ground meat and steaks are more readily available in the summer. Properly managed calving and birthing seasons contribute to a sustainable supply of bison year-round, allowing for better planning and reliable harvest dates.
WHY BISON
Once nearing extinction, the American bison has rebounded to around 500,000 animals in North America. Today, bison meat is a healthy and sustainable alternative to beef and pork, offering higher protein content, lower fat and cholesterol levels, and more natural raising methods. With the growing demand for local, high-quality meats, our bison provides lean, nutrient-dense protein that supports sustainability and ethical animal care.
